The department of cantal is situated in the south of the auvergne. the volcanic area (the largest in europe) with the “monts du cantal” dissolves into large plains where rivers flow. the highest mountains are the puy mary (1787 m) and the puy violent (1594 m).
around the mountainous area there are many picturesque villages, castles, country houses, fortifications and ruins. the medieval fortress town of salers is definitely worth a visit. you can also find great many roman churches and chapels here. often, they have square belfries and portals on the south side, directed towards the sun.
this is a rural area where many farmers still raise cattle, the local brand being "salers". the cows are a reddish brown and have beautiful horns and dominate the landscape. besides the cantal-cheese, the salers-cheese is specific for this area. there are many cheese-making farms to visit.
